1. Shape beef into 12 equally sized patties, about 2” wide. Using your finger, press a shallow indent into the center of each burger. Season both sides of each patty liberally with salt and pepper.

2. Heat grill or grill pan to medium-high. Grill burgers until seared, about 2 to 3 minutes per side. Top burgers with cheese. Meanwhile, grill zucchini slices until charred and tender, about 3 minutes per side.

3. Arrange burger patties in between grilled zucchini with tomato, pickles, ketchup, and mustard. Secure with toothpick.
